I've done a similar project for the French company (which has actually release the product and is available on the mark). - Which version of MQTT are you using 3.3.1 or 5 ? - Do you have real time requirements (collection data every xx and plot it no later than yy) ? - What the telemetry push frequency ? - For the monitoring I can propose you different type of plots (series, charts) + monitoring of the infrastructure and metada (like connection status, frequency push,....).
