Fix a Woocommerce site

We have a Woocommerce site which was developed by someone we can no longer get hold of. The problem is that it was made in a way that doesnt have obvious ways of altering stock levels. As it stands, if a colour goes out of stock, we have no way at all to show it as out of stock on the website. The items have variation of colour and bag size which have been demonstrated in fig 2. I deleted one of the colours in an attempt to take it out of stock. It has disappeared on the front end now but if I try to re-add, it gives the error "A term with the name provided already exists in this taxonomy." I tried to add two new colours (Sapphire and Turquoise) but on the front end it doesnt come up as a clickable option (fig 3) Fig1.. whenever I click that variations tab, it just stays stuck on that loading screen. These things need to be fixed immediately. I would imagine its probably less than an hours work for someone whos experienced with this.
