So, you want to CRD (create, update, delete) Simple Product on creation, update and deletion of class. Did I understand it correctly? WC REST API is one way to achieve it. The other way is to use WC API (public classes and functions). I shall also prefer to package new code into a separate plugin because it is the right way to extend functionality in wordpress. One solution is to use the WC API after capturing the SchoolPress's ajax call on server for CRD of Simple Product without changing the SchoolPress plugin.
