Hello I have read your short description and i understand what you need, i do that every month for 2 dozens of websites, but i would like to discuss not the job itself, cause its straight forward in 90% of cases (for other 10% we will be in touch and see what to do with it), but i would like to suggest to switch from hourly payment to project-based payment, its better due to time wasted on backups downloads and uploads.
