Hello, I'm an expert in these kind of projects, I also love developing in PIC micros. I have developed several data acquisition projects. I can use the micro's internal ADCs, or use an external ADC if required to capture the 5 analog signals. Then I can output the digital data stream on any of the micro's peripherals, or using any other method if required.
