Custom Posts Customization for Wordpress Site

I have created a custom post type called Workshops, with the Easy Content Types plugin. I have created a custom metabox called workshop details, with the fields starting date and ending date. They show up great on the on posts and archive page, but I need the ability to sort by Starting Date and Ending Date in the Workshops Post Type Listing page in the dashboard , and have them listed that way on an archives page. Right now, on the [login to view URL] the posts are sorted by date published with no way to order them in the admin. I also would need a way to display upcoming and past workshops on separate pages, possibly with a shortcode. Thank You.
