Organize emails in Microsoft 365 / Outlook

I currently have ~7,000 emails in my inbox and ~4,000 emails in my sent folder that need to be organized into folders, archived, deleted, etc. I have the folder structure in place. Some emails need to go into project folders, some need to be put into general or marketing folders, a few are spam/bulk that need to be deleted. The freelancer will have to communicate with me in some way (spreadsheet, email lists, or other) so I can indicate where certain emails go. Many emails are in "conversations" and can be bulk moved into folders.
