I have a program running in Raspberry PI 3 I need to be windowless and auto run and disable the control keys

I am using a raspberry pi for specific work purposes. I need the Pi to auto run the program, open without a window (so there is no top bar with the restore, minimize, close buttons) and disable the control keys so they cannot use control + alt+ delete to close out of the program. The Pi is a touchscreen and the program will require keyboard. If possible I need for the virtual keyboard to pop up every time they select a field that requires typing.
