Vectorizing photo

I need help with vectorizing a photo in order to create a vector symbol.
There is an existing symbol of the tower but unfortunately it only exists in a small, low-res .gif vector format so we can't use it for bigger sizes.
I'd like to re-create a better version of the symbol (based on the photo).
Your job would be to vectorize the photo really well (maybe you have to hand-trace/draw it). It needs to be good and detailed so I can create a cleaner, better, more detailed vector version of the existing symbol – on the basis of your vector file (.ai or .eps).
I will provide the high-res photo.

This is a personal project – I'm doing this for a signage for the building we live in.
Ideally I need the vector file by Thursday, June 13, 2018.

It's crucial for me that you're be able to provide an example of similar vectorizing work you've done, where you went through the same process, from a given photo to a vectorized (one color on white) symbol.
I need to see your process from source to result. Otherwise I won't know what I'm buying into.
