I've been involved on projects with PowerBI for the better part of the last 2 years. As you mentioned on your post, we can start demostrating the use of PowerBI taking information from Excel at the begining, but in time it will be better to extract information from a live system, or from a working database such as SQL Server or My SQL. For a project like this I would start with a brief conversation to understand your vision first, and then I would spend a few hours reviewing your files and information and will ask clarification questions if needed. From there I will work on preparing the information and building a few prototypes for you to look at. Once you choose the one that you like, we can work on improvements until we get something you are comfortable showing to your client.
