Arduino based Interactive boxing whack a mole device - open to bidding

Devices must be able to measure and record pressure and accuracy received through contact with the device. The device should be used to measure the force of a punch from a boxer, a kick from a MMA fighter, the force of a rugby tackle and to measure the force of a footballers shot. The product will come with 8 of these devices which means that I would want them to have two optional modes which users will be able to choose from, these will be either touch or motion. In order to run the "Whack a mole'' game I believe a Zigbee and Xbee would be perfect for this project but advice of correct systems is more than welcome.
